This year, our approach to processing is guided by the five elements - Earth, Fire, Air, Water and Space - a way to make sense of everything happening on the ground! Each element reflects a different way of engaging with time, environment and fermentation - from grounded, slow-building processes to fluid, fruit-forward styles, transformative techniques, lighter aromatic expressions and experimental trials. The result is shaped by intention to bring out distinctive and complex notes and gives us room to explore, adapt and keep pushing our processing forward. All of this work is carefully curated by Q-Processor, Hamsini Appadurai, with the aim of creating a wide and thoughtful range - so we always have something special for you!

EARTH
A chapter shaped by soil, leaves, spices and minerals - this element brings together our most grounded, process-driven fermentations. It includes spice co-ferments, various yeast inoculations, and slow fermentations with minerals and selective microbial cultures.

FIRE
Fire captures the essence of transformation and energy. This includes of our cold water soaks and dark room fermentations which actively reshape flavour and structure. Alongside these are the classic washed and natural coffees, with no fermentation, where transformation happens more subtly but no less profoundly.

AIR
Air explores fermentations that highlight clarity, aromatics and delicacy. From anoxic, aerobic and anaerobic processes to carbonic macerations and phased oxygen fermentations, we shape flavour development to create brighter and more nuanced coffees.

WATER
An element that celebrates abundance and expression. and highlights the estates’ natural bounty. This brings together our fruit-forward fermentations and floral-led processes where sugars and aromatic compounds interact to create round, vibrant and fragrant profiles.

SPACE
Space is where curiosity leads and experimentation takes the front stage. These include our micro-lots where techniques are combined, adapted or tested for the first time. It is also where we work with varietals such as Liberica, Kent and Yellow Catuai to test our ideas.
